This easy recipe was a huge hit at our Thanksgiving this year, so I thought I would share this yummy appitizer so everyone can enjoy it at their holiday parties!
Baked Brie in Puff Pastry with Onions, Mushrooms and Dates
- 7 tablespoons butter
- 2 onion, chopped
- 1 clove garlic minced
- 3 cups fresh sliced mushrooms
- 1 cup dates, pitted and chopped
- 1 pound (16 oz) Brie cheese
- 1 sheet of puff pastry, thawed
In a skillet over medium heat, melt butter and caramelize onions. Add mushrooms and cook down for a few minutes; then add the dates heat for about 2 minutes.
Working on a floured surface, roll out the puff pastry so that it will fully cover the brie. Place the brie in the middle of the puff pastry.
If your using a wheel of cheese, slice the Brie wheel in half down the center so that there is a top and a bottom; fill with the onion mixture. Replace the top of the Brie. I used 2 wedges instead of a wheel, so I just cut up the wedges and aranged them in a circular fashion, placing the mixture in the middle of some of the blocks and across the top. It gets all melty anyway, so it doesn't need to be pretty :)
Fold the excess pastry around the cheese, and pinch the top closed. Place on a lighly grease pan. Bake Brie at 350 degrees for 30 to 40 minutes or until puffy pasty is done; serve with crackers or crusty bread.
