These raspberry mousse cups I made for a Halloween bachelorette party were a huge hit with the bride-to-be and our friends. The colors for my Ghoul’s Night Out theme party were pink and black, so I needed a bright pink and delicious dessert for the girls to enjoy.
The dessert went well with my pink raspberry cosmos and looked great with my Halloween Ghouls Night Out Invitations and Party Favors. Check out the recipe below for a full how-to of this fresh treat!
Ingredients (makes 8-10 small servings)
- 2 pints raspberries (plus extra ¼ cup for garnish)
- 1/2 cup sugar
- 2 tbs lime juice
- 2 tsp gelatin (one packet of plain Knox gelatin is 2 tsp)
- 1/2 cup water
- 1 cup heavy cream (plus extra cream for garnish -1/2 to 1 cup)
Directions
- Wash and dry the raspberries, leaving the extra off to the side for garnish.
- Blend the raspberries, lime juice, and sugar in a food processor until smooth (about 5 minutes). Then, strain the mixture through a sieve to remove the seeds.
- Heat the gelatin and water until the gelatin dissolves, and then add to the raspberry mixture. Cool in the fridge for 1-2 hours until it solidifies.
- In a standing mixer, blend the raspberry gelatin mixture and the heavy cream. Spoon the mousse into cups and chill for another hour.
- While the mousse is chilling, whip the heavy cream in the stand mixer until stiff peaks form. Add 1-2 tbs of sugar to taste if desired.
- Use a piping bag with a #12 tip to pipe a dollop of cream on the top of each mousse cup. Add a few raspberries as garnish.
