Kathleen, part of the web team at Party411.com, uses this recipe for restaurant style buffalo chicken wings for her football parties every weekend. "It saves me tons of money versus ordering out since my husband and brothers can really pack the wings away. I just fry them up and toss them in a few different wing sauces, usually a mild, a hot and a BBQ so everyone has something they like."
Ingredients:
- oil for deep frying
- 2-1/2 cups all-purpose flour
- 1-1/4 teaspoons paprika
- 1-1/4 teaspoons cayenne pepper
- 1-1/4 teaspoons salt
- 50 chicken wings
- Your favorite wing sauce
- Heat oil in a large frying pan or deep fryer to 375 degrees F. The oil should be just enough to cover wings entirely, usually about an inch. If you are using a pan, make sure there is a 2" headspace.
- In a large bowl mix together the flour, paprika, cayenne pepper and salt. Dredge chicken wings in mixture until completely coated. Cover and refrigerate for at least an hour.
- Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. You can keep them warm in a 200 degrees F oven until you have all the wings done or you are ready to serve them. To serve, coat in your favorite wing sauce with a side of blue cheese and ranch dressing!
