This is my grandmother's cheesecake recipe that I adapted for the 4th of July (or any summer party)
Berry Patriotic Cheesecake
Crust
16 graham crackers (crushed fine)
1/4 cup melted butteror use a pre-made graham cracker crust*
Filling
3 - 8 oz packages of cream cheese
1 cup sugar
5 eggs
1 teaspoon vanillaTopping
1 pint of sour cream
1/4 cup sugar
1/2 teaspoon vanilla
Blueberries and raspberries
If making your own crust, mix together the cracker crumbs and butter. Line a 9x13 inch pan with the crumb mixture and slightly build up the sides.
Cream together cream cheese and sugar. Add eggs and vanilla, beat until smooth. Pour into crust. Bake at 325 degrees Fahrenheit for 40 minutes. Remove from oven, set aside and cool.
Increase oven temperature to 475 degrees Fahrenheit. Mix together topping ingredients (except berries). Pour over cheese cake. Return to oven for 5 minutes more. Remove and cool. Top with berries.
*If you use the premade crust there will be more filling than there is space for it, so don't use it all. Make sure to leave an inch or so open at the top for the topping.
