We had a Super Bowl birthday party for my brother last year. We served a buffet of "football" foods, nachos, meatballs, hot dogs, ect.
We also ordered this giant cutout of the birthday boy as a football player from party411.com, which was a huge hit.

How about hosting a Quick Count Football "Bowl" tournament during your Super Bowl party? Our friends are doing one.
Simple enough - just putting together some basic brackets and picking up a few decks. Come up with a fun "trophy" for the winner.

I always stick to trivia. You can do traditional football/Super Bowl questions on historical facts and figures, and throw in observational things for the less devoted fans, - What was the last commercial seen? or, What team had the first penalty? That makes it fun for everyone. Give out little prizes, my wife makes little prize bags filled with candy.
