This is my signature chili recipe, and although it has a lot of ingredients, it is very easy to make! Served over corn chips with cheese and sour cream, it will be a favorite at any party (I am making it for our Super Bowl Party of course)
Kathleen's Crockpot Chili
2 pounds ground beef
1 pound bacon, cut into small pieces
2 can of black beans, drained
2 can of kidney beans, drained
1 container of medium salsa (fresh is always better)
1 jar of corn salsa
2 (28 ounce) cans diced tomatoes
1 small can tomato paste
1 large yellow onion, chopped
2 bell pepper, seeded and chopped ( I usually do one red and one green)
4 cubes beef bouillon
1/2 cup beer
1 package chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce (e.g. Tabasco or Frank's Red Hot)
1 teaspoon dried basil
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1/4 cup white sugar
Fritos, shredded cheddar cheese and sour cream for serving
- Brown beef and bacon. Drain off grease.
- Saute onions, garlic and peppers in little olive oil.
- Mix the meat, onion and pepper, and all of the other ingredients in a large crock pot set on low, or a large stock pot on medium low heat. Cover and simmer for at least 2 hours, stirring occasionally.The longer it cooks the better it will taste. I make mine the day before, let it cool, and then reheat. Yum!
- To serve, line the bottom of a bowl with fritos, pour chili over it, and top with cheese and sour cream.
